Palak Mushrooms Recipe Ingredients:
- Spinach -1 bunch ( washed and cleaned)
- Button Mushrooms – 15-20 ( washed, cleaned and cut into halves)
- Red Onions – 2, finely chopped
- Tomatoes – 2/3 (pureed in mixer)
- Garlic – 4-5 piece
- Ginger – thumb sized
- Green Chillies – as per tolerance
- Salt – as per taste
- Choti Elachi – 2-3
- Badi Elachi – 1
- Tej Patta – 2
- Heeng – a pinch or two
- Garam Masala – 1 teaspoon
- Mustard Oil – 4-5 tablespoons
- Sukki Lal Mirch -2/3
- Half cup water
Palak Mushrooms Recipe Method:
- Place washed and cleaned spinach in pressure cooker along with salt, ginger, garlic and slit open green chillies. Add half a cup of water and pressure cook for 2-3 whistles. Keep aside
- Saute washed mushrooms till golden brown separately
- Heat mustard oil in a kadaahi. Once heated add – heeng, choti elachi, badi Elachi, tej patta. Saute for 10-15 seconds
- Once aroma is sensed, add chopped onions and saute till golden brown
- Add tomatoes puree and cook masala with lid on kadaahi
- While masala is cooking, puree boiled spinach in a blender
- Add spinach puree to cooked masala and cook for 5mins on medium flame
- Add sauteed mushrooms and garam masala
- Cook on medium flame for another 5mins
- Enjoy this sabji with phulka naan or plain rice
whole spices:
- Now add remaining ginger and garlic mince saute for 30 seconds and then add onion puree. Let it cook for at least 5-7 minutes or till onions brown
- Add tomato puree and let it cook for another 5-7 minutes or till oil starts to separate
- Add Turmeric powder, coriander powder, Garam masala, salt and chili powder cook for another minute
- On low flame add marinated mushrooms and mix well. Ads 1/2 cup water cover and cook on low flame for 10 minutes or till semi thick consistency is reached
- Garnish with green coriander and serve with roti or rice
